Preparation
For preparing this meal, you need to have a spiral cutter – otherwise you really need to be patient and skilled in order to get good results. 🙂
Basically, vegetable noodles have a low amount of calories. If you are fine with some carbohydrate, you can also add sweet potatoes. Zucchini include a high percentage of calcium and magnesium, beetroots contain a higher amount of iron. Beside vitamins C, E, B1 and B2, carrots also contain beta carotene, which prevent heart diseases.

Preheat oven to 220°C. Wash all vegetables, peel beetrots and carrots. Douse sweet potatoes with hot water and scrub with a sponge – or simply also peel them. Spin all vegetables with the spiral cutter.

If necessary, cut noodles in half. Add somewhat olive oil to a pot, flavor with salt and pepper; add the vegetables and stir everything.

Put the vegetables on a baking tray and bake them for approximately 25 minutes – check and stir from time to time.
Tastes best with pesto finish, e.g. the green pesto.
