Vegan curry

Easy and delicious curry for cashew and broccoli fans!

Ingredients (3 persons) 1 broccoli
45g cashew nuts
3-4 spring onions
1 red onion
400ml coconut milk
240g basmati rice
ginger (optional)
vegetable stock
1 spoon of curry
1 spoon of tomato paste
coconut oil
salt
pepper

Preparation

Don’t get calorie-reduced coconut milk as it mostly contains unnecessary unhealthy additives!

Cut broccoli florets and wash them. Boil rice and add broccoli 5 minutes before rice is even.

In the meantime, cut spring onions and red onion. Heat some coconut oil in a cooking pot and roast onions and cashew nuts gently – add some ginger, if you like. Deglaze everything with coconut milk. Add curry, some vegetable stock and tomato paste. Flavor with some salt and pepper.

Don’t put boiled rice and broccoli into the pot! Serve rice in a bowl and top it with some sauce.
