Penne with broccoli, smoked tofu and tomato sauce

Simple, but tasty – ideal if you don’t have much time.

Ingredients (3 persons) 300g wholemeal spelt penne
broccoli
olive oil
120g smoked tofu
1 red onion
25g pine nuts
250g mushrooms
250g cocktail tomatoes
4 spoons of tomato paste
vegetable stock
sweet basil
salt
pepper
nutmeg
curcuma

Preparation

Cut broccoli florets and wash them. Boil noodles, add broccoli 5 minutes before noodles are even.

In the meantime, cut red onion and smoked tofu into small cubes – sear them with some olive oil. Add some nutmeg or curcuma if you like. Wash mushrooms and quarter them – don’t peal them! Add pine nuts and mushrooms and roast them for a couple of minutes. Cut tomatoes in half and add them, deglaze with some water and vegetable stock. Add tomato paste and sweet basil, flavor with salt and pepper. If necessary, add some water so that the sauce becomes liquid.

Finish with some basil leafs if you like – vegetarians can also go for some parmesan cheese.
